Pecorino DOP is an Italian cheese, produced from raw sheep's milk. The semi-ripened paste cheese has a cylindrical shape, smooth facets and a flat or slightly convex side. The shell has golden traces, typical of wickerwork, and the surface is treated with extra virgin olive oil and wine vinegar. It has a compact texture with irregularly arranged small meshes. The taste, initially delicate and sweet, becomes slightly spicy at the end of the ripening period, after which it becomes more and more substantial.
